Sustainable food
Regional or local wherever possible
The sourcing and offering of regional or local food is also anchored in our sustainability strategy. The products are special simply because they have grown or flourished in small quantities in the alpine air with their seasons. The short delivery routes and the sourcing from local agriculture also make these delicacies extremely sustainable.
If available in season, we use regional fresh produce in our kitchens wherever possible. In the summer of 2022, we started to plant our own herb garden, where various types of herbs thrive in the Engadine mountain climate. Due to the harsher climate and the high altitude sun, the herbs develop a much higher intensity of flavour than the mass-produced commercial goods. We are also planning our own vegetable garden in the village, which will enable us to grow most of the vegetables we need ourselves and to bring them from the garden to the plate with the shortest possible transport.
As you may have seen on a hike, there are beehives here and there in the valley. The beekeepers, or rather their bees, produce wonderful mountain honey in limited editions. In GuardaVal you can enjoy only honey from Scuol beekeepers and their bees. At Belvair and Belvedere, honey comes from the surrounding villages of the Engadine and the Alps.
And even the milk comes from the region. With the "Lataria Engiadinaisa" - LESA for short - in Bever, we have a milk processor as a partner, which obtains its milk from around 50 mountain farmers between Martina and Maloja and processes it into various dairy products. LESA is also one of the highest dairies in Europe. www.lesa.ch
Not everything can be sourced entirely from the region and still be sustainable. For example, in Belvair and Nam Thai we offer soft drinks from Goba AG. The company, based in Gontenbad in Appenzell, produces creative drinks from the mineral spring water found there. By offering Goba drinks, we are taking into account a national SME with around 67 employees. www.goba-welt.ch
