Regional with a broad outlook, innovative and sustainable - these are just a few of the keywords we use to describe our cuisine at the Hotel Belvedere. «Il dalet pür» loosely translated means «pure enjoyment» and is reduced to what counts.
The producers are mostly from the valley, if not from further afield into the lowlands, and we maintain personal and friendly relationships with most of our suppliers. We value their craftsmanship, their passion for good products and their endeavour to always get the best out of everything - just as we always aim to do ourselves.

Good products, the joy of eating and conviviality - that's what creates the music on the plate. I love to present dishes beautifully and freshly. As a family man, I know how valuable time together is, and nowhere are people more united than at the table.
I spent most of my professional life in Spain, where the culture of food merges with everything and is so important. This has shaped me and has resulted in a cuisine that carries my heart and reflects my greatest concentration in every dish. It is also healthy, because nothing does better than the good flavours that turn us into children!
I'm not looking for the «latest craze» or the «spectacular», I stay quiet and modest. There is a lot of stewing, preserving and proper cooking. Craftsmanship is very important, the pots smoke, the meat is roasted and the dough is given the time it needs to be perfect. I am a chef with heart and soul and always want to give my guests the best.
The menu changes daily and my favourite dishes stay on the menu longer. Every season has its highlights, which we present in a special way. With my cuisine «Il dalet pür» I take you back to the core of flavour, to the simplicity of something special.
